Ingredients

Acai Bowl

  • 1 ripe organic banana – frozen
  • 1 cup organic baby spinach 
  • 1 cup organic frozen blueberries 
  • 1 1/2 cups almond milk (or any dairy-free milk of choice)
  • 2 tbsp acai powder 
  • 2 tbsp maqui powder  
  • 2 tbsp roasted almond butter 
  • Fresh fruit to serve 

Roasted Nut Butter

  • 2 cups raw almonds
  • 1/2 tsp vanilla extract paste
  • Pinch of Himalayan sea salt

Instructions

  1. Preheat oven to 180°C
  2. Place almonds on a baking tray and roast for 10 mins. Allow to cool and then transfer to a food processor
  3. Add vanilla and salt and process for 10-15 mins or until smooth and buttery. Every now and then you will need to scrape down the sides so the nut butter is blended evenly
  4. Transfer the nut butter to a clean jar or container
  5. Combine all the acai bowl ingredients in a blender and blend until smooth and creamy
  6. Pour your acai blend into a bowl and top with fresh fruit and an extra drizzle of nut butter
  7. Enjoy
